Prepare the pomegranate
Cut the pomegranate in half. Hold each half over a bowl, seeds facing down, and tap the back with a wooden spoon. The seeds (arils) will fall out. Remove any white pith that falls in.
Prepare the avocado
Cut avocados in half, remove the pit, and dice the flesh.
Chop the onion
Thinly slice the red onion.
Make the dressing
Zest and juice the lime. In a small bowl, whisk together lime zest, lime juice, olive oil, Dijon mustard, honey, salt and pepper until emulsified.
Assemble the salad
In a large bowl, combine mixed greens, pomegranate arils, diced avocado, and sliced onion. Drizzle with dressing and toss gently to combine.
Serve
Serve pomegranate avocado salad immediately. Can be made ahead, but add avocado and dressing just before serving to prevent browning and wilting.
