Preheat the oven
Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan.
Prepare the crust
In a large bowl, mix together the flour and 1/2 cup of sugar. Cut in the butter until the mixture resembles coarse crumbs. Add the egg yolks and mix until a dough forms.
Press the crust into the pan
Press the dough evenly into the prepared baking pan.
Prepare the poppy seed filling
In a food processor, grind the poppy seeds until they are fine. In a saucepan, combine the ground poppy seeds, remaining 1/2 cup of sugar, milk, lemon zest, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens, about 10 minutes.
Spread the filling over the crust
Pour the hot poppy seed filling over the crust and spread it evenly.
Bake the squares
Bake the poppy seed squares for 30-35 minutes, or until the edges are golden brown and the filling is set.
Cool and cut
Allow the squares to cool completely in the pan. Cut into 16 equal squares.
Serve and enjoy
Serve the poppy seed squares at room temperature. Enjoy your delicious Balkan-inspired treat!
