Marinate pork

In a bowl, whisk together the juice of 1 lime, fish sauce, brown sugar, minced garlic, vegetable oil, salt, and pepper. Place the pork tenderloin in a shallow dish and pour the marinade over it, turning to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

Grill pork

Preheat the grill to medium-high heat. Remove the pork from the marinade and discard the excess. Grill the pork for 6-8 minutes per side, or until the internal temperature reaches 145°F (63°C). Transfer the pork to a cutting board and let it rest for 5 minutes.

Prepare mango and vegetables

While the pork is grilling, peel and dice the mangoes. Thinly slice the cucumber and red onion. Peel and grate the carrot.

Slice pork

Once the pork has rested, slice it thinly against the grain.

In a small bowl, whisk together the juice of the remaining lime, 1 tablespoon of fish sauce, and 1 teaspoon of brown sugar until the sugar dissolves.

In a large bowl, combine the sliced pork, diced mango, sliced cucumber, sliced red onion, grated carrot, chopped mint leaves, and chopped cilantro leaves.

Dress and toss salad

Pour the dressing over the salad and toss gently to coat all ingredients evenly.

Divide the salad among four serving plates and serve immediately.
