Steps

Read instructions and get ready to cook

1
Season the pork chops

Season both sides of the pork chops with salt and black pepper.

2
Sear the pork chops

Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side, or until golden brown. Remove the pork chops from the skillet and set aside.

3
Prepare the vegetables

Slice the mushrooms. Finely chop the onion. Mince the garlic cloves.

4
Sauté the vegetables

In the same skillet, melt the butter over medium heat. Add the sliced mushrooms, chopped onion, and minced garlic. Sauté until the vegetables are softened and lightly caramelized, about 5-7 minutes.

5
Prepare the sauce

Stir in the chicken broth, heavy cream, and Dijon mustard. Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.

6
Finish cooking the pork chops

Return the pork chops to the skillet with the sauce. Reduce the heat to low, cover the skillet, and simmer for 5-7 minutes, or until the pork chops are cooked through and the sauce has thickened.

7
Prepare the thyme

Remove the thyme leaves from the stems and roughly chop them.

8
Finish the dish

Taste the sauce and adjust the seasoning with salt and black pepper, if needed. Sprinkle the chopped thyme over the pork chops.

9
Serve

Serve the Pork Chops in Mushroom Sauce hot, accompanied by mashed potatoes or rice.
