Steps

Prepare the leeks
Trim the roots and dark green tops from the leeks. Slice the leeks in half lengthwise and rinse thoroughly under running water to remove any dirt. Thinly slice the leeks crosswise.
Melt the butter
In a large pot, melt the butter over medium heat.
Sauté leeks and garlic
Add the sliced leeks and minced garlic to the pot. Sauté for 5-7 minutes, or until the leeks are softened and fragrant.
Prepare the potatoes
While the leeks cook, peel and dice the potatoes into 1/2-inch cubes.
Add potatoes and broth
Add the diced potatoes and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
Blend the soup
Using an immersion blender or working in batches with a regular blender, purée the soup until smooth and creamy.
Add cream and seasonings
Stir in the heavy cream, salt, and black pepper. Simmer for an additional 5 minutes to allow the flavors to meld.
Prepare the thyme
Remove the leaves from the thyme sprigs.
Serve and enjoy
Ladle the Potato Leek Soup into bowls and garnish with fresh thyme leaves. Serve hot and enjoy your comforting and delicious meal.
