Preheat the oven

Preheat your oven to 400°F (200°C).

Prepare the spaghetti squash

Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of each half with 1 tablespoon of olive oil and season with salt and black pepper.

Bake the spaghetti squash

Place the spaghetti squash halves cut-side down on a baking sheet. Bake for 30-40 minutes, or until the squash is tender and easily pierced with a fork.

Prepare the vegetables

While the squash is baking, slice the zucchini into half-moons. Cut the red and yellow bell peppers into thin strips. Halve the cherry tomatoes. Mince the garlic cloves.

Sauté the vegetables

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced zucchini, bell peppers, and minced garlic. Sauté for 5-7 minutes, or until the vegetables are tender.

Add tomatoes and seasonings

Add the halved cherry tomatoes, dried oregano, remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the skillet. Cook for an additional 2-3 minutes, or until the tomatoes are softened.

Shred the spaghetti squash

Using a fork, scrape the inside of the baked spaghetti squash to create long, spaghetti-like strands.

Toss the spaghetti squash with vegetables

Add the spaghetti squash strands to the skillet with the sautéed vegetables. Toss gently to combine and heat through.
