Rinse quinoa
Rinse the quinoa under cold running water in a fine-mesh strainer.
Cook quinoa
In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer until the quinoa is tender and has absorbed the water, about 15 minutes.
Prepare vegetables
While the quinoa cooks, zest and juice the lemon. Finely chop the fresh parsley.
Cook peas
In a separate small saucepan, bring 1 cup of water to a boil. Add the frozen green peas and cook until tender, about 3-4 minutes. Drain the peas.
Combine ingredients
In a large bowl, combine the cooked quinoa, cooked peas, lemon zest, lemon juice, olive oil, chopped parsley, salt, and black pepper. Stir to combine.
Serve
Taste the quinoa and adjust the seasoning with additional salt and pepper, if needed. Serve the quinoa with green peas warm or at room temperature.
