Preheat the oven

Preheat the oven to 200°F (90°C) and line two baking sheets with parchment paper.

Prepare the egg whites

In a large, clean bowl, beat 4 egg whites and 1/4 teaspoon of cream of tartar with an electric mixer on medium speed until soft peaks form.

Add sugar and vanilla

Gradually add 1 cup of granulated sugar, 1 tablespoon at a time, while continuing to beat the egg whites on high speed until stiff, glossy peaks form. Beat in 1 teaspoon of vanilla extract.

Divide the meringue

Divide the meringue evenly among six small bowls.

Add food coloring

Add 1 drop of red food coloring to the first bowl, 1 drop of orange to the second, 1 drop of yellow to the third, 1 drop of green to the fourth, 1 drop of blue to the fifth, and 1 drop of purple to the sixth. Gently fold each color into the meringue until just swirled, being careful not to overmix.
