Prepare the watermelon
Cut a seedless watermelon into 1-inch cubes, yielding about 4 cups. Place the watermelon cubes in a large salad bowl.
Prepare the raspberries
Rinse 2 cups of fresh raspberries and gently pat them dry with a clean kitchen towel. Add the raspberries to the salad bowl.
Prepare the feta cheese
Crumble 1 cup of feta cheese into the salad bowl.
Prepare the dressing
In a small bowl, whisk together the zest and juice of 2 medium limes, 2 tablespoons of honey, 2 tablespoons of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper until well combined.
Prepare the mint
Roughly chop 1/4 cup of fresh mint leaves.
Assemble the salad
Pour the honey-lime dressing over the watermelon, raspberries, and feta cheese in the salad bowl. Gently toss the salad until all the ingredients are well coated with the dressing.
Garnish and serve
