Read instructions and get ready to cook
Prepare the tofu
Drain the tofu and press it between two plates with a weight on top for 10 minutes to remove excess water. Cut the tofu into 1-inch cubes.
Prepare the vegetables
Roughly chop the spinach leaves. Peel and finely chop the onion. Peel and mince the garlic cloves and ginger.
Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes until softened. Add the minced garlic and ginger, and cook for 1 minute until fragrant.
Add spices and tofu
Stir in the curry powder, cumin, turmeric, salt, and black pepper. Add the tofu cubes and cook for 5 minutes, stirring gently to coat the tofu with the spices.
Pour in liquids and simmer
Pour in the coconut milk and vegetable broth. Bring the mixture to a boil, then reduce heat to low and let simmer for 10 minutes.
Add spinach and serve
Add the chopped spinach to the pot and stir until the spinach wilts, about 3-5 minutes. Serve the Tofu and Spinach Curry hot over rice or with naan bread.
