Prepare the berries

Rinse the blueberries under cold water and drain.

Puree and strain

Use a blender to puree the blueberries until smooth. Strain the puree through a fine sieve to remove the skins and set aside.

Combine milk and sugar

In a saucepan, heat the milk and sugar over medium heat until the sugar dissolves and the mixture is just about to boil.

Temper the egg yolks

In a bowl, whisk the egg yolks. Then add a small amount of the hot milk to the yolks while whisking continuously. Continue adding the hot milk slowly to fully incorporate.

Thicken the custard

Return the egg yolk and milk mixture to the saucepan. Heat over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

Combine with blueberry puree

Remove the custard from the heat and let it cool slightly before adding the blueberry puree. Stir well to combine.

Stir in the heavy cream and then chill the mixture in the refrigerator for at least 4 hours.
