Read instructions and get ready to cook
Preheat oven
Preheat the oven to 375°F (190°C).
Prepare duck
Remove giblets from duck cavity. Rinse duck inside and out, then pat dry with paper towels.
Season duck
Rub duck with salt and pepper, inside and out.
Prepare apples
Core and chop apples into 1-inch cubes. Chop onion.
Sauté stuffing
In a pan, sauté apples and onion in olive oil until softened. Add chopped thyme and rosemary.
Stuff duck
Fill duck cavity with the apple mixture.
Truss duck

Roast duck
