Prepare the pears
Peel the pears, leaving the stems intact. Cut a thin slice off the bottom of each pear to create a flat surface for standing. Juice the lemon and set aside.
Prepare the poaching liquid
In a large saucepan, combine the water, granulated sugar, dark rum, cinnamon sticks, and vanilla bean. Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
Poach the pears
Reduce the heat to low and add the peeled pears to the poaching liquid. Add the lemon juice to prevent the pears from browning. Simmer the pears, turning occasionally, until they are tender when pierced with a knife, about 20-30 minutes.
Remove the pears
Using a slotted spoon, carefully remove the poached pears from the liquid and set them aside on a plate.
Reduce the syrup
Increase the heat to medium-high and bring the poaching liquid to a boil. Cook until the syrup is reduced by half and thickened, about 10 minutes. Remove the cinnamon sticks and vanilla bean.
Serve
Place each poached pear on a serving plate and drizzle with the reduced rum syrup. Serve warm or at room temperature, with a scoop of vanilla ice cream or whipped cream if desired.
