Boil the potatoes
Place the potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer until the potatoes are tender when pierced with a fork, about 15 minutes.
Prepare the dressing
In a large bowl, whisk together the Dijon mustard, apple cider vinegar, olive oil, salt, and black pepper until well combined.
Chop the onion
While the potatoes are cooking, finely chop the red onion.
Chop the parsley
Finely chop the fresh parsley.
Drain and cut the potatoes
Drain the cooked potatoes and let them cool slightly. Once cool enough to handle, cut the potatoes into bite-sized pieces.
Toss the salad
Add the cut potatoes, chopped red onion, and chopped parsley to the bowl with the dressing. Toss gently until the potatoes are well coated.
Serve and enjoy
Serve the Rustic Potato Salad warm or at room temperature. Enjoy as a side dish or on its own.
