Prepare the zucchini

Preheat the oven to 375°F (190°C). Rinse the zucchini and slice it into 0.25-inch thick rounds.

Prepare the onion and garlic

Peel and finely chop the onion. Peel and mince the garlic cloves.

Sauté the onion and garlic

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes or until softened. Add the minced garlic and cook for 1 minute until fragrant.

Prepare the cream sauce

In a bowl, mix the heavy cream, half of the grated Parmesan cheese, thyme, salt, and black pepper until well combined.

Assemble the gratin

In a 9x13 inch baking dish, arrange a layer of zucchini slices, slightly overlapping them. Spread half of the sautéed onion and garlic mixture over the zucchini. Pour half of the cream sauce evenly over the onion layer. Repeat the layers with the remaining zucchini, onion mixture, and cream sauce. Sprinkle the remaining Parmesan cheese evenly over the top.

Bake the Zucchini Gratin for 25-30 minutes or until the top is golden brown and bubbly. Remove from the oven and let it cool for 5-10 minutes before serving hot as a side dish.
