Read instructions and get ready to cook
Preheat the oven
Preheat oven to 375°F (190°C).
Prepare the salmon
If using raw salmon, season lightly with salt and pepper. Cook in a skillet over medium heat for 4-5 minutes until just cooked through. Flake into bite-sized pieces. If using pre-cooked salmon, simply flake into pieces.
Prepare the vegetables
Cut broccoli into small florets. Wash spinach thoroughly. Peel and dice onion.
Cook the vegetables
In an oven-safe 10-inch skillet, heat oil over medium heat. Add diced onion and cook until translucent, about 3 minutes. Add broccoli florets and cook for 3-4 minutes until slightly tender. Add spinach and cook until wilted, about 1-2 minutes.
Prepare the egg mixture
In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in half the cheese.
Combine ingredients
Add flaked salmon to the vegetables in the skillet. Distribute evenly.
Add the egg mixture
Pour the egg mixture over the salmon and vegetables. Gently stir to ensure even distribution.
Cook on stovetop
Cook on medium-low heat for 5-7 minutes until edges begin to set. Do not stir during this time.
Add remaining cheese
Sprinkle remaining cheese over the top.
Bake the frittata

Finish and serve
Remove from oven. Let rest for 5 minutes. Drizzle with remaining oil. Cut into wedges and serve.
