Rinse and drain the cannellini beans. Peel and dice the carrot. Dice the celery stalk. Peel and finely chop the yellow onion. Peel and mince the garlic cloves.
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the sausages and cook until browned on all sides, about 5 minutes. Remove sausages and set aside.
In the same pot, add the remaining 1 tablespoon of olive oil. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft, about 5 minutes.
Add the minced garlic, dried thyme, and dried rosemary to the pot. Cook for 1 minute until fragrant.
Slice the browned sausages into 1-inch pieces and return them to the pot. Add the diced tomatoes (with juice), drained cannellini beans, and chicken broth. Season with salt and pepper to taste.
Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, stirring occasionally.
Taste the stew and adjust the seasonings with more salt and pepper if needed.
