Read instructions and get ready to cook
Preheat oven and prep muffin pan
Preheat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line with paper liners.
Mix dry ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
Mix wet ingredients
In another bowl, beat the eggs, milk, and olive oil until well combined.
Grate cheese
Grate the cheddar cheese using a box grater.
Cook sausage
In a skillet over medium heat, cook the pork sausage until browned and crumbly. Drain excess fat.
Chop spinach, garlic, and onion
Roughly chop the spinach. Mince the garlic cloves. Finely chop the onion.
