Prep Ingredients

Preheat your oven to 425°F (220°C). Cook the bacon slices in a pan until crispy, then transfer to a paper towel-lined plate. Once cooled, chop the bacon into small pieces. Grate 1 cup of cheddar cheese. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of sugar, and 1/2 teaspoon of salt. Cut 1/2 cup of chilled, unsalted butter into small cubes and add to the flour mixture.

Combine Ingredients

Using a pastry blender or your fingers, work the butter into the flour mixture until it resembles coarse crumbs. Stir in the chopped bacon and grated cheddar cheese. Make a well in the center of the mixture and pour in 3/4 cup of milk. Mix until just combined, being careful not to overwork the dough.

Shape and Bake

Turn the dough out onto a lightly floured surface and gently knead it a few times until smooth. Roll or pat the dough out to about 1 inch thick. Use a biscuit cutter or a glass to cut out biscuits. Place biscuits on a baking sheet lined with parchment paper. Beat 1 large egg and brush the tops of the biscuits with the egg wash. Bake for 12-15 minutes, or until golden brown.
