Read instructions and get ready to cook
Preheat oven
Preheat the oven to 425°F (220°C).
Prepare baking sheet
Line a large baking sheet with parchment paper.
Prepare potatoes
Wash and cut potatoes into 1-inch cubes.
Season potatoes
In a bowl, toss potato cubes with 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
Arrange potatoes
Spread seasoned potatoes in a single layer on the prepared baking sheet.
Roast potatoes
Place the baking sheet in the oven and roast potatoes for 15 minutes.
Prepare salmon
Pat salmon fillets dry with paper towels.
Season salmon
Brush salmon with remaining olive oil and season with remaining salt and pepper.
Prepare herbs and garlic
Finely chop rosemary and thyme leaves. Peel and mince garlic cloves.
Add tomatoes and salmon
Remove baking sheet from oven. Push potatoes to one side and add cherry tomatoes and salmon fillets to the sheet.
Add herbs and garlic
Sprinkle minced garlic, rosemary, and thyme over salmon and vegetables.
Prepare lemon
Slice lemon into thin rounds.
Add lemon slices
Place lemon slices on top of the salmon fillets.
Roast
Return the baking sheet to the oven and roast for 10-12 minutes, until salmon is cooked through and flakes easily with a fork.
Serve
Remove from oven and let rest for 2 minutes before serving.
