Soak the skewers
Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.
Prepare the ingredients
Peel and devein the shrimp. Cut the bell peppers and red onion into 1-inch pieces. Mince the garlic. Juice the lemon. Chop the oregano leaves.
Make the marinade
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, chopped oregano, salt, and black pepper.
Marinate the shrimp
Add the shrimp to the bowl with the marinade. Toss to coat evenly. Cover and refrigerate for 15 minutes.
Assemble the kabobs
Thread the marinated shrimp, bell pepper pieces, and red onion pieces onto the soaked skewers, alternating the ingredients.
Preheat the grill
Preheat the grill to medium-high heat (400°F / 200°C).
Grill the kabobs
Place the kabobs on the grill. Cook for 4-5 minutes on each side, or until the shrimp are pink and cooked through and the vegetables are slightly charred.
Serve
Remove the kabobs from the grill and serve hot.
