Marinate the beef
Cut the beef sirloin into 1-inch cubes and place in a large bowl. Add 1 tablespoon of the berbere spice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well to coat the beef and set aside to marinate for 15 minutes.
Prepare the vegetables
Slice the red onion thinly. Mince the garlic cloves. Dice the tomatoes and cucumber. Slice the jalapeño pepper into thin rounds. Juice the lemon.
Cook the beef
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the marinated beef cubes and cook for 5-7 minutes, stirring occasionally, until browned on all sides.
Add onions and garlic
Add the sliced onions and minced garlic to the skillet. Cook for 5 minutes, stirring frequently, until the onions are softened and translucent.
Season and simmer
Stir in the remaining 1 tablespoon of berbere spice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Reduce the heat to low, cover the skillet, and simmer for 10 minutes, allowing the flavors to meld.
Prepare the salad
In a medium bowl, combine the diced tomatoes, cucumber, jalapeño pepper, and lemon juice. Drizzle with the remaining 1 tablespoon of olive oil and toss to coat.
Serve
Transfer the Siga Tibs to a serving platter and serve hot alongside the Ethiopian salad. Enjoy with injera bread, if desired.
