Read instructions and get ready to cook
Soak the beans
Rinse the navy beans and soak them in water overnight or for at least 6 hours. Drain and set aside.
Preheat the oven
Preheat the oven to 325°F (165°C).
Cook the bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and crumble it, reserving 2 tablespoons of the bacon fat.
Sauté the onion
Dice the onion and sauté it in the reserved bacon fat until softened and translucent, about 5 minutes.
Combine ingredients
In a large Dutch oven or baking dish, combine the soaked beans, crumbled bacon, sautéed onion, molasses, brown sugar, tomato paste, Dijon mustard, smoked paprika, garlic powder, salt, and black pepper. Stir to mix well.
Add water
Pour in the water and stir to combine.
Bake the beans
Cover the Dutch oven or baking dish and bake for 2 to 2 1/2 hours, stirring occasionally, until the beans are tender and the sauce has thickened.
Serve
Remove from the oven and let the beans cool slightly before serving as a side dish.
