Peel and devein the shrimp, leaving the tails on if desired. Rinse the shrimp under cold water and pat them dry with paper towels.
Prepare the garlic and ginger
Mince the garlic cloves and grate the ginger.
Prepare the sauce
In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil until well combined.
Chop green onions
Thinly slice the green onions, separating the white and green parts.
Heat the oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
Stir-fry garlic and ginger
Add the minced garlic, grated ginger, and the white parts of the green onions to the hot oil. Stir-fry for 30 seconds, or until fragrant.
Add shrimp
Add the prepared shrimp to the skillet and stir-fry for 2-3 minutes, or until the shrimp turn pink and are nearly cooked through.
Add sauce
Pour the soy sauce mixture over the shrimp and stir-fry for another 1-2 minutes, or until the sauce thickens and coats the shrimp evenly.
