Prepare the spaghetti squash

Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the cut sides with 1 tablespoon of olive oil and place the halves cut-side down on a baking sheet. Bake for 40-45 minutes, or until the squash is tender when pierced with a fork.

Prepare the vegetables

While the squash is baking, finely chop the onion and mince the garlic cloves. Dice the red bell pepper and zucchini. Halve the cherry tomatoes. Chop the fresh basil leaves.

Sauté the vegetables

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes. Add the diced red bell pepper and zucchini, and cook until tender, about 5-7 minutes. Stir in the halved cherry tomatoes, chopped basil, salt, and black pepper. Remove from heat.

Shred the spaghetti squash

Using a fork, scrape the flesh of the baked spaghetti squash to create long, spaghetti-like strands. Transfer the strands to a large bowl.

Add the sautéed vegetable mixture to the bowl with the spaghetti squash strands. Toss gently to combine.

Divide the spaghetti squash mixture into 4 equal portions. On a baking sheet lined with parchment paper, form each portion into a nest shape, creating a well in the center.
