Read instructions and get ready to cook
Whisk eggs and milk
In a medium bowl, whisk together the eggs and milk until well combined. Set aside.
Heat olive oil
In a large non-stick skillet, heat the olive oil over medium heat.
Mince garlic
Peel and mince the garlic cloves. Add to the hot skillet and sauté for 30 seconds until fragrant.
Sauté spinach
Add the baby spinach to the skillet and sauté until wilted, about 2-3 minutes.
Add egg mixture
Pour the whisked egg mixture over the sautéed spinach. Let cook for 30 seconds without stirring.
Scramble eggs
Using a spatula, gently push the eggs from the edges of the pan towards the center, allowing the uncooked eggs to flow to the bottom of the pan. Continue this process until the eggs are set but still slightly moist, about 3-4 minutes.
Season and serve
Season the scrambled eggs with salt and black pepper. Divide the spinach and egg scramble between two plates and serve hot. Enjoy!
