Prepare the lamb shanks
Season the lamb shanks generously with salt and black pepper.
Prepare the vegetables
Cut the onion, carrots, and celery into large chunks. Mince the garlic cloves.
Brown the lamb shanks
Heat olive oil in a large Dutch oven over medium-high heat. Add the seasoned lamb shanks and brown on all sides, about 3-4 minutes per side. Remove the lamb shanks and set them aside.
Sauté the vegetables
In the same Dutch oven, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
Add spices and tomato paste
Stir in the ground cumin, ground coriander, paprika, and tomato paste. Cook for 1-2 minutes until fragrant.
Add liquids and aromatics
Pour in the chicken broth and red wine. Add the cinnamon stick and bay leaves. Stir to combine and bring the mixture to a simmer.
Braise the lamb shanks
Return the browned lamb shanks to the Dutch oven, nestling them into the liquid. Cover the pot with a tight-fitting lid and transfer it to a preheated 325°F (165°C) oven. Braise for 2 1/2 to 3 hours, or until the lamb shanks are tender and easily pull away from the bone.
Reduce the sauce
Remove the lamb shanks from the Dutch oven and set them aside. Remove and discard the cinnamon stick and bay leaves. Place the Dutch oven over medium-high heat and simmer the braising liquid until it has reduced and thickened slightly, about 10-15 minutes.
Serve
Return the lamb shanks to the Dutch oven, spooning the reduced sauce over the top. Serve the spice-braised lamb shanks hot with your favorite side dishes, such as mashed potatoes or couscous. Enjoy!
