Prepare the croissant dough
In a large bowl, mix the flour, yeast, sugar, and salt. Heat the milk until lukewarm, then add it to the flour mixture along with 1 egg. Knead until a soft dough forms. Cover and refrigerate for 1 hour. Roll the dough into a rectangle, spread 1 cup of butter over two-thirds of the dough, fold, and refrigerate for 30 minutes. Repeat the rolling, folding, and chilling process two more times.
Prepare the filling
Mince the chicken thighs. Mince the garlic and ginger. Chop the green onions. Mix the minced chicken with garlic, ginger, green onions, soy sauce, sesame oil, five-spice powder, and red pepper flakes.
Shape the croissants
Roll the chilled dough into a large rectangle. Cut into 12 triangles. Place some filling on the wide end of each triangle. Roll up the croissants, tucking the ends underneath. Place on a baking sheet, cover, and let rise for 30 minutes.
Bake the croissants
Preheat the oven to 400°F (200°C). Brush the croissants with the remaining beaten egg. Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
