Read instructions and get ready to cook
Prepare the tofu
Drain the tofu and press it between two plates with a weight on top for 10 minutes to remove excess water. Cut the tofu into 1-inch cubes.
Prepare the vegetables
Peel and thinly slice the onion. Peel and mince the garlic cloves. Peel and grate the ginger.
Make the sauce
In a small bowl, whisk together the soy sauce, rice vinegar, and sesame oil. Set aside.
Cook the peas
Bring a large pot of water to a boil. Add the frozen peas and cook for 3-4 minutes or until tender. Drain the peas and set them aside.
Stir-fry the tofu and vegetables
Heat the olive oil in a large skillet or wok over medium-high heat. Add the tofu cubes and stir-fry for 5 minutes or until golden brown. Add the sliced onion, minced garlic, grated ginger, red pepper flakes, salt, and black pepper. Stir-fry for 3-4 minutes or until the onion is softened.
Add peas and sauce
Add the cooked peas to the skillet and pour in the sauce. Stir-fry for 1-2 minutes or until the peas are heated through and the sauce is well combined.
Serve
Thinly slice the scallions. Serve the Tofu with Green Peas hot, garnished with sliced scallions.
