Begin by removing the casing from 8 oz of Mexican chorizo. Set it aside for later use. Then, peel and finely chop 1 medium yellow onion and 2 garlic cloves. This preparation ensures your dip will be infused with flavor. Grate 2 cups of cheddar cheese and 2 cups of Monterey Jack cheese. Combine them and let sit at room temperature. Cook Chorizo
In a large skillet over medium heat, cook the chopped chorizo, stirring occasionally, until it's fully cooked and slightly crispy, about 5-7 minutes. Transfer the chorizo to a bowl, leaving the fat rendered from the chorizo in the skillet for cooking the onion.
