Preheat the oven
Preheat the oven to 375°F (190°C).
Prepare the spinach
Rinse the spinach and roughly chop it. Steam the spinach in a large pot for 3-5 minutes until wilted. Drain the spinach and squeeze out excess water.
Prepare the vegetables
Peel and finely chop the onion. Peel and mince the garlic cloves.
Sauté the vegetables
Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté for 5 minutes until softened.
Combine the filling
In a large bowl, mix the steamed spinach, sautéed onion and garlic, ricotta cheese, crumbled feta cheese, eggs, salt, black pepper, and nutmeg until well combined.
Assemble the pie
Roll out the pie crust and place it in a 9-inch pie dish. Pour the spinach and cheese mixture into the crust and spread it evenly.
Bake the pie
Bake the Spinach Pie for 40-45 minutes or until the crust is golden brown and the filling is set. Let the pie cool for 10 minutes before slicing and serving.
