Prepare the vegetables

Rinse the spinach leaves and roughly chop them. Peel and finely chop the onion. Peel and mince the garlic cloves. Peel and cut the potato into small cubes.

Sauté the aromatics

Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes or until softened.

Add potato and broth

Add the potato cubes to the pot and cook for 2 minutes, stirring occasionally. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low and let it simmer for 10 minutes or until the potato is tender.

Add spinach and seasonings

Add the chopped spinach to the pot and stir until wilted, about 2-3 minutes. Season with salt, black pepper, and nutmeg.

Remove the pot from heat and let the soup cool slightly. Use an immersion blender or transfer the soup to a blender and puree until smooth.
