Read instructions and get ready to cook
Prepare the steaks
Season both sides of the beef tenderloin steaks with salt and black pepper.
Prepare the vegetables
Finely chop the shallot and mince the garlic cloves. Clean and slice the cremini mushrooms.
Cook the steaks
Heat olive oil in a large skillet over medium-high heat. Add the seasoned steaks and cook for 3-4 minutes per side, or until browned and cooked to your desired doneness. Remove the steaks from the skillet and set them aside.
Sauté the vegetables
In the same skillet, add the chopped shallot, minced garlic, and sliced mushrooms. Sauté until the mushrooms have released their moisture and are golden brown, about 5 minutes.
Deglaze the pan
Remove the skillet from the heat and carefully add the brandy. Return the skillet to the heat and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Simmer until the brandy has reduced by half, about 1-2 minutes.
Add liquids and seasonings
Stir in the beef stock, heavy cream, Dijon mustard, and Worcestershire sauce. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.
Finish the sauce
Reduce the heat to low and whisk in the unsalted butter until melted and incorporated into the sauce.
Return the steaks to the skillet
Add the cooked steaks back to the skillet and spoon the sauce over the top. Simmer for 1-2 minutes to warm the steaks through.
Prepare the herbs
Finely chop the fresh parsley leaves.
Serve
Serve the Steak Diane hot, garnished with chopped parsley. Enjoy with your favorite side dishes, such as mashed potatoes and steamed green beans.
