Steps

Read instructions and get ready to cook

1
Season the steak

Season the sirloin steak with salt and black pepper on both sides.

2
Prepare the mushrooms

Clean the mushrooms with a damp paper towel. Slice the mushrooms thinly.

3
Prepare the shallot and garlic

Finely chop the shallot. Mince the garlic cloves.

4
Prepare the thyme

Remove the thyme leaves from the stems and roughly chop them.

5
Cook the steak

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the seasoned steak and cook for 4-5 minutes on each side for medium-rare, or longer if desired. Transfer the steak to a plate and tent with foil to keep warm.

6
Sauté the mushrooms

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, about 8-10 minutes.

7
Add the shallot and garlic

Add the chopped shallot and minced garlic to the skillet. Cook, stirring frequently, until fragrant and softened, about 2-3 minutes.

8
Deglaze the pan

Pour the beef broth into the skillet, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer and cook until the liquid has reduced by half, about 5 minutes.

9
Finish the sauce

Stir in the heavy cream and chopped thyme. Season with salt and black pepper to taste. Simmer for an additional 2-3 minutes, or until the sauce has thickened slightly.

10
Slice the steak

Slice the cooked steak against the grain into 1/2-inch thick strips.

11
Serve

Arrange the sliced steak on a serving platter and spoon the mushroom sauce over the top. Serve hot.
