Read instructions and get ready to cook
Prepare Tofu
Press the tofu to remove excess water, then cut into 1-inch cubes.
Prepare Vegetables
Peel and julienne the carrot. Slice the bell pepper into thin strips. Cut the broccoli into small florets. Mince the garlic and ginger. Chop the green onions.
Cook Noodles
Cook the rice noodles according to package instructions, then drain and set aside.
Heat Oil
Heat vegetable oil in a large skillet or wok over medium-high heat.
Sauté Tofu
Add the tofu cubes to the skillet and sauté until golden brown, about 5 minutes. Remove and set aside.
Stir-Fry Vegetables
In the same skillet, add the minced garlic and ginger. Sauté for 1 minute. Add the julienned carrot, sliced bell pepper, and broccoli florets. Stir-fry until tender-crisp, about 5 minutes.
Combine Ingredients
Return the tofu to the skillet. Add the cooked noodles, soy sauce, and sesame oil. Toss everything together and stir-fry for another 2-3 minutes.
Garnish and Serve
Stir in the chopped green onions. Serve the stir-fried noodles with tofu hot.
