Prepare strawberries
Wash and hull strawberries. Pat dry with paper towels.
Mix mochi ingredients
In a microwave-safe bowl, mix glutinous rice flour, sugar, and water until smooth.
Cook mochi
Microwave the mixture for 1 minute. Stir, then microwave in 30-second intervals, stirring between each, until the mochi is translucent and sticky (about 3 minutes total).
Prepare work surface
Dust a work surface generously with cornstarch.
Cool mochi
Transfer the hot mochi to the cornstarch-dusted surface. Let it cool slightly until it can be handled.
Divide mochi
Divide the mochi into 8 equal portions.
Prepare filling
For each daifuku, flatten a portion of mochi, place a small scoop of red bean paste in the center, and top with a strawberry.
Wrap daifuku
Carefully wrap the mochi around the filling, sealing it completely. Dust with additional cornstarch to prevent sticking.
Shape
Gently shape each daifuku into a smooth, round form.
Serve
Arrange on a plate and serve immediately, or store in an airtight container in the refrigerator for up to 2 days.
