Read instructions and get ready to cook
Prepare the cucumbers
Wash the English cucumbers and pat them dry. Cut each cucumber into 1-inch thick rounds. Using a melon baller or small spoon, scoop out the center of each cucumber round to create a small cup, being careful not to scoop through the bottom.
Prepare the sun-dried tomatoes
Drain the sun-dried tomatoes from their oil and finely chop them.
Prepare the feta cheese
Crumble the feta cheese into small pieces.
Mix the filling
In a medium bowl, combine the hummus, chopped sun-dried tomatoes, and crumbled feta cheese. Mix well until all ingredients are evenly distributed.
Fill the cucumber cups
Using a small spoon, fill each cucumber cup with the hummus mixture, mounding it slightly on top.
Garnish and serve
