Preheat Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare the Mushrooms
Gently clean 16 large mushrooms with a damp cloth and remove the stems. Set the caps aside and finely chop the stems.
Prepare the Filling
Mince 2 cloves of garlic and finely chop 1/4 cup of fresh parsley. In a bowl, mix the chopped mushroom stems, minced garlic, chopped parsley, 8 oz of cream cheese, 1/4 cup of grated Parmesan cheese, 1/2 cup of breadcrumbs, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until well combined.
Stuff the Mushrooms
Spoon the filling into each mushroom cap, pressing gently to ensure the mixture is compact.
Prepare for Baking
Brush each stuffed mushroom lightly with olive oil and place them on the prepared baking sheet.
Bake
Bake in the preheated oven for 20 minutes, or until the mushrooms are tender and the tops are golden brown.
