Prepare the turkey breast

Butterfly the turkey breast by cutting it open horizontally, stopping about 1 inch from the opposite side. Open it up like a book and flatten it with a meat mallet until it's an even thickness.

Prepare the stuffing ingredients

Clean the mushrooms and slice them thinly. Wash the spinach and remove any tough stems. Roughly chop the spinach leaves. Peel and mince the garlic cloves. Peel and finely chop the shallots. Grate the Parmesan cheese.

Sauté the stuffing ingredients

In a large skillet, melt the butter over medium heat. Add the minced garlic and chopped shallots, and sauté for 2-3 minutes until softened. Add the sliced mushrooms and cook for 5-6 minutes until they release their moisture and start to brown. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Make the stuffing mixture

In a medium bowl, mix together the sautéed mushroom and spinach mixture, grated Parmesan cheese, salt, and black pepper until well combined.

Stuff the turkey breast

Spread the stuffing mixture evenly over the butterflied turkey breast, leaving a 1-inch border around the edges. Roll the turkey breast up tightly, starting from one of the long sides, and secure it with kitchen twine at 1-inch intervals.

Season the turkey breast

Place the stuffed turkey breast in a roasting pan. Rub the surface of the turkey with the remaining salt and black pepper. Tuck the thyme sprigs under the twine.

Roast the turkey breast

Preheat the oven to 375°F (190°C). Roast the stuffed turkey breast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
