Chop vegetables
Remove the seeds and stems from the bell peppers and chop them into bite-sized pieces. Cut the tomatoes into chunks. Peel and chop the onions. Peel and mince the garlic cloves.
Heat oil
Heat the olive oil in a large pot or Dutch oven over medium heat.
Sauté onions and garlic
