Infuse the milk with saffron

In a small saucepan, heat the milk until it's steaming. Remove from heat, add the saffron threads, and let steep for 10 minutes.

Activate the yeast

In a large bowl, combine the warm saffron milk, yeast, and a pinch of sugar. Let sit for 5 minutes until foamy.

Make the dough

To the yeast mixture, add the remaining sugar, salt, softened butter, and egg. Mix well. Gradually add the flour, stirring until a soft dough forms.

Knead and proof the dough

Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

Shape the buns

Punch down the dough and divide it into 12 equal pieces. Roll each piece into a 12-inch rope, then curl the ends in opposite directions to form an S-shape. Place a raisin in the center of each spiral. Place the shaped buns on a baking sheet, cover, and let rise for 30 minutes.

Bake the buns

Preheat the oven to 400°F (200°C). Brush the buns with an egg wash. Bake for 12-15 minutes, or until golden brown. Let cool slightly before serving.
