Read instructions and get ready to cook
Bake sweet potatoes
Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then pierce them with a fork. Place on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
Mash sweet potatoes
Allow the baked sweet potatoes to cool slightly, then peel and mash them in a large bowl.
Grate cheese
Grate the Parmesan cheese using a box grater. Add to the mashed sweet potatoes.
Mince garlic
Peel and mince the garlic cloves. Add to the bowl with the sweet potatoes and cheese.
Add remaining ingredients
Add the breadcrumbs, eggs, salt, and black pepper to the bowl. Mix well until all ingredients are combined.
Shape croquettes
Using your hands, shape the mixture into 12 equal-sized patties, about 1/2 inch thick.
Heat oil
In a large skillet, heat the olive oil over medium heat.
Fry croquettes
Working in batches, carefully place the croquettes in the hot oil and fry for 3-4 minutes per side, or until golden brown and crispy.
Drain and serve
