Read instructions and get ready to cook
Prepare sweet potatoes
Rinse and scrub 2 pounds of sweet potatoes. Peel the sweet potatoes and cut them into 1-inch cubes.
Boil sweet potatoes
Place the cubed sweet potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 15-20 minutes, or until the sweet potatoes are tender when pierced with a fork.
Prepare garlic and thyme
While the sweet potatoes are cooking, mince 3 cloves of garlic and finely chop 2 tablespoons of fresh thyme leaves.
Drain and mash sweet potatoes
Once the sweet potatoes are tender, drain them in a colander and return them to the pot. Use a potato masher or hand mixer to mash the sweet potatoes until smooth.
Add butter, milk, and seasonings
Add 4 tablespoons of unsalted butter, 1/4 cup of whole milk, minced garlic, chopped thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the mashed sweet potatoes. Stir until the butter is melted and all ingredients are well combined.
Serve
