Read instructions and get ready to cook
Soak rice noodles
Place the rice noodles in a large bowl and cover with boiling water. Let soak for 8-10 minutes, or until tender. Drain and set aside.
Prepare the vegetables and aromatics
Mince the garlic cloves and ginger. Slice the red bell pepper and carrot into thin strips. Chop the green onions, separating the white and green parts. Thinly slice the red chili, removing seeds for less heat if desired.
Slice chicken and prawns
Slice the chicken breast into thin strips. Devein the prawns and slice them in half lengthwise, if large.
Mix the sauce
In a small bowl, whisk together the soy sauce, oyster sauce, and fish sauce. Set aside.
Heat oil and cook eggs
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Crack the eggs into the pan and scramble until cooked. Remove from the pan and set aside.
Stir-fry chicken and prawns
Add the remaining 1 tablespoon of vegetable oil to the pan. Stir-fry the chicken and prawns until the chicken is cooked through and the prawns turn pink, about 3-4 minutes. Remove from the pan and set aside.
Stir-fry vegetables and aromatics
In the same pan, stir-fry the minced garlic, ginger, and white parts of the green onions for 1 minute. Add the red bell pepper, carrot, and red chili. Stir-fry for 2-3 minutes, until the vegetables are crisp-tender.
Combine ingredients and sauce
Return the cooked noodles, chicken, prawns, and scrambled eggs to the pan. Pour the sauce over the ingredients and toss well to combine. Stir-fry for 1-2 minutes, until everything is heated through and well-coated with the sauce.
Garnish and serve
Transfer the Thai-style chicken and prawn fried noodles to serving plates. Garnish with the green parts of the chopped green onions. Serve hot.
