Prepare the chicken wings
Pat 2 lbs of chicken wings dry with paper towels. Cut the wings at the joint to separate the drumettes and flats, discarding the wing tips.
Prepare the coating
In a large bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
Coat the wings
Add the chicken wings to the flour mixture and toss until evenly coated.
Heat the oil
In a large, heavy-bottomed pot or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).
Fry the wings (first fry)
Working in batches, carefully add the coated wings to the hot oil and fry for 8-10 minutes, or until lightly golden and cooked through. Remove the wings from the oil and place them on a wire rack to drain excess oil.
Prepare the Buffalo sauce
In a small saucepan, melt 1/2 cup of unsalted butter over low heat. Whisk in 1/2 cup of hot sauce and 1 teaspoon of garlic powder until well combined.
Fry the wings (second fry)
Increase the oil temperature to 375°F (190°C). Return the wings to the hot oil and fry for an additional 2-3 minutes, or until crispy and golden brown. Remove the wings from the oil and place them on a clean wire rack.
Toss the wings in the sauce
In a large bowl, toss the crispy wings with the prepared Buffalo sauce until evenly coated.
Prepare the blue cheese dressing
In a food processor, blend 4 oz of crumbled blue cheese, 1/2 cup of sour cream, and 1/4 cup of buttermilk until smooth.
Prepare the celery
Wash and cut 6 celery stalks into sticks.
