Prepare the cucumber

Wash the cucumber and grate it using the large holes of a box grater. Place the grated cucumber in a fine-mesh strainer and sprinkle with 1/4 teaspoon of salt. Let it sit for 10 minutes to release excess water.

Drain the cucumber

Using your hands or a clean kitchen towel, squeeze the grated cucumber to remove as much liquid as possible. Transfer the drained cucumber to a large bowl.

Mince the garlic

Mince the garlic cloves and add them to the bowl with the cucumber.

Add the yogurt and seasonings

Add the Greek yogurt, olive oil, remaining 1/4 teaspoon of salt, and black pepper to the bowl. Stir to combine.
