Read instructions and get ready to cook
Prepare baking sheet
Line a baking sheet with parchment paper and set aside.
Combine sugar, syrup, and water
In a medium saucepan, combine the sugar, golden syrup, and water. Stir gently to combine.
Heat mixture
Place the saucepan over medium heat and allow the mixture to come to a boil, without stirring. Boil for 5-7 minutes, until the mixture turns a deep amber color.
Remove from heat and add baking soda
Remove the saucepan from the heat and quickly whisk in the baking soda. The mixture will foam up rapidly.
Pour onto baking sheet
Immediately pour the mixture onto the prepared baking sheet, tilting the sheet to spread it evenly. Do not spread with a spatula, as this will deflate the honeycomb.
Let cool and break into pieces
Allow the honeycomb to cool completely at room temperature, about 30 minutes. Once cool, break it into pieces using your hands or a knife.
