Preheat oven

Preheat the oven to 375°F (190°C). Grease a large baking dish with olive oil.

Slice vegetables

Slice the eggplant, zucchini, and bell peppers into 1/4-inch thick rounds. Cut the tomatoes into 1/2-inch thick slices. Peel and thinly slice the onions. Peel and mince the garlic cloves.

Layer vegetables

In the prepared baking dish, arrange a layer of eggplant slices, followed by zucchini, bell peppers, tomatoes, onions, and minced garlic. Repeat the layering until all the vegetables are used, ending with a layer of tomatoes on top.

Season vegetables

Drizzle the remaining olive oil over the layered vegetables. Sprinkle with paprika, dried oregano, salt, and black pepper.

Bake casserole

Cover the baking dish with foil and bake the casserole for 45 minutes.

Crumble feta cheese

While the casserole is baking, crumble the feta cheese into small pieces.

Add feta and continue baking

Remove the foil from the baking dish and sprinkle the crumbled feta cheese evenly over the top of the casserole. Return the dish to the oven and bake for an additional 15 minutes or until the vegetables are tender and the cheese is lightly browned.

Let cool and serve

Remove the Balkan Vegetable Casserole from the oven and let it cool for 5-10 minutes before serving.
