Finely chop the onion, carrots, zucchini, and red bell pepper. Mince the garlic cloves.

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken breasts with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add the chicken to the pot and cook until browned, about 3-4 minutes per side. Remove the chicken and set aside.

In the same pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion, carrots, zucchini, and red bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for 1 minute more.

Add the rice and broth

Stir in the long-grain white rice, chicken broth, remaining 1/2 teaspoon salt, 1/4 teaspoon black pepper, and dried thyme. Bring the mixture to a boil.

Cook the chicken and rice

Return the browned chicken breasts to the pot, nestling them into the rice mixture. Reduce the heat to low, cover, and simmer until the chicken is cooked through and the rice is tender, about 20-25 minutes.

Remove the pot from the heat and stir in the frozen peas. Let stand, covered, for 5 minutes to allow the peas to heat through.

Using two forks, shred the chicken breasts directly in the pot, mixing them into the rice and vegetables.
