Prepare the vegetables
Separate the butter lettuce leaves, rinse, and pat them dry. Julienne the carrot and bell peppers. Thinly slice the mushrooms. Thinly slice the green onions, separating the white and green parts. Mince the garlic cloves and grate the ginger.
Prepare the sauce
In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, and sesame oil.
Stir-fry the vegetables
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the white parts of the green onions, minced garlic, and grated ginger. Stir-fry for 30 seconds until fragrant.
